Migas con ajo

Ever have huevos con migas? It's a classic morning Mexican dish were tortillas are fried to a crisp crunch and cooked with scrambled eggs. Cheese and tomatoes are often added. It's a hearty breakfast an oh so good. Especially with the jalepeno juice soaked carrots.

Well in the age of cholesterol and heart conditions and Minding the swimsuit figure, it's time to modernize this classic Little dish. That also means no chorizo!

Pieces of whole wheat lavash bread were sauteed in 100 percent virgin olive oil, baby heirloom tomatoes and a garlic and spice blend from the homes of the Hani brothers (a garlic Greek specialty from the farmers market).



The aromas were infusing the body with garlic... So watch out peeps.

Add the eggs, scramble to a joyous perfection and eat your little heart out. The potent garlic and tomatoe freshness with the crisp lavash bread enhanced with the olive oil makes for a great reinvetion of the popular Migas! (pronounced meee-gaahs).
