Mahi and risotto

Mahi mahi comes to full flavor with garlic and tarragon in a sweet vinegar and tomatoe compote sizzled and curled while it basted:


With a mushroom and dill risotto, the arborio rice and mahi married well. With a baby beet salad and balsamic glaze, nice flavors.
